This recipe kind of was created organically as I wanted to make a quiche, but I didn't have all of the ingredients in the recipe I wanted to use. So instead of making a paleo crust, I used coppa ham as the "crust" which apports a wonderful saltiness to the fluffy egg dish.
I also absolutely love vegetables, and like my meals to be filled with them, so I knew that I wanted there to be lots of veggies in this quiche. Traditionally, I find that quiches and other egg dishes are always a bit light on the veggies, and it would be so easy to just add in more!
In this quiche, you'll find mushrooms, leeks, and tomatoes, some of my favorite veggies, that all seem like very french vegetables. Fitting seeing as I'm living in France and baking quiches. I hope you enjoy this little quiche as much as I did!

Cook Time: 45 minutes
Utensils: small creme brulé dish (see above photo)
The ingredients:
- 1 tablespoon olive oil
- 1 leek, chopped
- 1 clove of garlic, chopped
- 1/2 cup mushrooms, chopped
- 1/2 tomato, chopped
- 1 teaspoon lime juice
- 1 tablespoon cilantro, chopped
- 1/4 teaspoon salt
- sprinkle of pepper
- 1/8 teaspoon chipotle pepper
- 1/4 teaspoon cumin
- 2 eggs
- 2 tablespoons coconut milk, full fat
- 9 slices of coppa ham
The creation:
1. Preheat the oven to 350 F. Next, begin by heating the olive oil over medium heat in a wok pan. Add the leeks and garlic, and let sauté for 2-3 minutes, until the leeks begin to soften.
2. Then add the mushrooms and lime juice to the mix, and let cook for 4 more minutes.
3. Next, add the tomatoes, cilantro, salt, pepper, chipotle pepper, and cumin and mix thoroughly and let cook for 5 more minutes over medium heat, stirring frequently.
4. Meanwhile, in a medium bowl, whisk the eggs and coconut milk together. In the small creme brulé dishes, place 3 slices of coppa ham in each of the 3 dishes, covering the bottom and the edges of the dish, so it forms essentially "the crust" of the quiche.
5. Then add the vegetable stir fry to the egg mixture and stir well. Pour this mixture into each of the 3 dishes, filling almost to the top. The quiche will rise a bit, but not much.
6. Place the dishes in the oven and let bake for 30 minutes. Accompany with a green salad... Bon appétit!
