I'm not currently doing a Whole30, but I got in the habit of eating a more savory breakfast when I did my first whole30 back in January. Typically, my go-to breakfast has been sweet potato toast with either almond butter and blueberries or guacamole and prosciutto. But recently I've been itching to switch things up a little more, and gradually I have developed this sweet potato hash that is to die for! This hash is so flavor packed and delicious, it leaves me feeling satisfied and full the whole morning and I don't even miss not having something sweet to start my day!

The Ingredients:
- 1 sweet potato, cubed
- 2 tablespoons olive oil, divided
- 1 teaspoon harissa seasoning
- 2 mini bell peppers, chopped
- 1 cup spinach, packed
- 1/4 teaspoon chili powder
- 1/4 teaspoon whole cumin seeds
- Sprinkle of salt
- Sprinkle of pepper
- 1 piece of prosciutto, cut into 1 inch pieces
- 1 egg
The Creation:
1. Preheat the oven to 350 degrees. Place the cubed sweet potato in a medium sized bowl and add 1 tablespoon of olive oil and the harissa seasoning. Mix thoroughly until all cubes are evenly coated with the oil and seasoning. Then spread the cubes out on a cookie sheet and let bake in the oven for 20 minutes.
2. Meanwhile, in a medium skillet, heat 1 tablespoon of olive oil over medium high heat. Then add the bell peppers and let cook until browned, about 5 minutes. Once the peppers have a browned a bit, add in the spinach, chili powder, cumin seeds, salt and pepper. The spinach will cook down quite a bit. continue to mix until the spinach has cooked down, about 1 minute.
3. By this time, your sweet potatoes should be done. Remove from oven and add a spoonful or about a 1/4 cup of cubed sweet potatoes to the skillet along with the sliced prosciutto, mix briefly. The left over sweet potato can be saved for future breakfast hashes! (Normally I get 3-4 hashes from 1 sweet potato).
4. Then, lower heat to medium and crack the single egg into the pan. Immediately begin stirring the egg into the mixture. The egg will start to stick to the side of the pan. If the egg is cooking too quickly, sometimes I will remove the pan from the heat and finish cooking the egg there. The egg does not take very long to cook, maybe 1-2 minutes at most. Once the egg is cooked to your liking, you are done! Bon appétit!
