The right combination of fruit and meat, in my opinion, can make some of the most delicious dishes. Finding that appropriate balance between savory and sweet isn't always straight forward, but I think this tangy apricot sauce has done just that!
For awhile now my mind has kept coming back to the idea of an apricot and pork combination. I think my interest may have something to do with the sweet tangy-ness of apricots paired with the mild yet flavorful tenderness of pork. I guess I should also disclose that I am a huge apricot lover and I was just looking for another way to sneak them into my diet ;)
But seriously, this sauce is delicious and I see it having many different uses; from topping over some coconut yogurt, to jazzing up some stir fried veggies, to drizzling it over lamb.... this sauce will do wonders. I see it becoming one of my staple sauces. So take advantage of it while apricots are still in season and try it out!

Cook Time: 10-15 minutes
The Ingredients:
The Creation:
1. Set your oven on Broil high. Meanwhile place the sliced apricots in a baking dish, flat side down.
2. Fill the baking dish with approximately 1 cm of water and allow to broil for 10 to 15 minutes.
3. Once they are done, they may be brown/burnt on top, but simply remove the burnt part.
4. Drain the water out and put the cooked apricots into a mixing bowl and mix until a chunky sauce has formed. The apricots should be pretty soft and easy to break down.
5. Once mixed, add the coconut oil and honey. Serve over meats (such as my YUMMY pork chops), veggies, or your favorite dairy free ice cream!
