Prepare yourself to bite into a warm, fluffy, and delicious ginger apple cookie that epitomizes all things fall. The spicy ginger flavor of this cookie is perfectly balanced with the sweet and tangy spiralized apple pieces.
This weekend I was in the mood for fall baking and stumbled upon this delicious combination of ingredients that brings me back to eating warm ginger cookies as a child. These cookies were everything I could have wanted in a cookie, crispy but fluffy, gooey, sweet, warm and satisfying. They were sweet, but not so sweet that I ate the whole batch.
Also, given that it's fall, who doesn't love an excuse to add apples to any recipe you can?! My recommendation: make these cookies and enjoy them in the company of friends, family, and the crisp fall weather.

- Form 1 inch balls and spread across a parchment lined baking sheet.
- Toss the spiralized apple with the cinnamon and place a spoonful on each cookie, pressing it into the cookie so it flattens a little bit.
- Place in oven and cook for 8-10 minutes.
