Anywho, since I began eating a basically Paleo diet, Ramen has been out of the question for me. But as I began to reminisce on the glory days of ramen with tuna, I realized that it was totally feasible to create my own version of Ramen, however healthy and paleo. This recipe uses yellow squash noodles instead of the freezer dried wheat noodles ramen uses. Instead of their chicken flavored seasoning, I use chicken broth and poultry seasoning to evoke a very similar flavor. And well the tuna, that just stayed the same :). I can honestly say that this soup brought me back to my childhood when I ate it. While it may not be exactly like Ramen, it is of a similar essence, and much better for you. If you are a fellow ramen lover like me, definitely give this recipe a try!
Cook Time: 15-20 minutes
Serves: 2-3
The Ingredients:
- 3 small/medium yellow squash, spiralized
- 3 stalks green onion, chopped
- 8 ounces chicken broth
- 1/2 cup of water
- 1/2 teaspoon poultry seasoning
- 1/4 teaspoon salt
- dash of pepper
- One 4 ounce can of tuna
The Creation:
1. Bring the chicken broth and water to a boil over medium-high heat in a sauce pan. Once the water is boiling, add the yellow squash, green onions, poultry seasoning, salt and pepper to the pan.
2. Let cook for 4-5 minutes, stirring occasionally.
3. Reduce the heat to medium/low and add the can of tuna, letting cook 4 more minutes. Remove from heat and serve. Bon appétit!
