Dried apricots are one of my favorite snacks. They're acidic, yet sweet and fresh all at the same time... and they have a lovely texture.
So the other day, when I was trying to think of new type of cookie to make, I wanted to find a way to incorporate these orange gems. Next, I thought about what flavors might go nicely with apricots, and coconut and honey came to mind. All three of these ingredients really are a wonderful mélange! The butteriness of the coconut cuts through the sweet acidity of the honey and apricots. This is a great lighter dessert, that has fruit in it too, so it's kind of healthy, right? haha either way, you can enjoy these cookies and not feel super heavy afterwards. Cook Time: 10-12 minutes
The ingredients:
- 3/4 cup almond flour
- 1/2 cup finely shredded coconut
- 2 tablespoons coconut flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup honey
- 1/2 teaspoon vanilla
- 1/4 cup coconut oil, melted
- 1/2 cup dried apricots, finely chopped
The creation:
1. Preheat the oven to 350 degrees. Then mix the dry ingredients together in a large bowl (almond flour, shredded coconut, coconut flour, salt, and baking soda).
2. In a separate bowl, mix together the honey, vanilla, and melted coconut oil.
3. Add the wet ingredients to the dry ingredients. Lastly mix in the dried apricots.
4. Form about 1 inch sized cookies into flattened circles and place on a parchment paper lined pan. Cook in the oven for 10-12 minutes at 350 degrees. Cookies are done when the exterior has cooked, they're a light brown on the bottom, but still are a bit fluffy to the touch. You don't want them to be too dry. Bon appétit!
