These tacos are one of my week night go-to recipes! It's really quite a large recipe, so you can make it one night and then have leftovers throughout the week. The combination of the sweet green peppers with the more savory ground turkey and seasonings is mouth watering.
As far as the taco shell goes, I HIGHLY recommend making these plantain tortillas. They are super simple (only plantains, water, salt, and olive oil) and are wonderfully soft and sweet. A fun alternative to an almond flour/ coconut flour tortilla or a corn tortilla! You can garnish these tacos with your favorite toppings. Here, I garnished them with a big of lime juice, guacamole, and cilantro.

The Ingredients:
- 1 yellow onion, chopped
- 1 tablespoon olive oil
- 2 green bell peppers, chopped
- 1 lb ground turkey
- One 16 oz can of diced tomatoes
- 1/2 teaspoon salt
- 1teaspoon cumin
- 1 teaspoon paprika
- 1/4 teaspoon chipotle chili powder
- 1 teaspoon oregano
- The Creation:
1. Heat the olive oil in a large skillet over medium high heat with the onion and green bell peppers for about 10 minutes, stirring occasionally. By the end the onions and vegetables should be a bit browned, like fajita vegetables.
2. Then add the ground turkey, diced tomatoes, salt, cumin, paprika, chipotle powder, and oregano, letting simmer on medium heat for 20-25 minutes. Be sure to break break up the ground turkey right when you add it to the pan and occasionally stir around the mixture (about every 5 minutes) to ensure even cooking. You'll know the taco stuffing is done once all of the excess liquid has evaporated.
