Grilling vegetables is a great way to add more flavor to your plate. And given that it's summer, right now is the perfect time to try it out. Before this summer, I hadn't really grilled vegetables, or really much of anything. The grill always seemed kind of intimidating to me-- and it still does. But I feel a little more comfortable with it after cooking on it a few times.
I'm a huge fan of sweet potatoes. Normally I just bake them in the oven and have them as fries or as a whole sweet potato, but grilling them gives a nice smokey flavor. And it's super easy! I cut mine into circles because it yields a greater surface area for grilling and makes them easy to flip over. You can eat these as chips, regular potatoes, or even use them as a bun for a grain-free sandwich! They are simply a delight.
Prep Time: 5 minutes
Cook Time: 20 minutes
The ingredients:
- 1 sweet potato
- 1 tablespoon olive oil
- 1/4 teaspoon coarse sea salt
- 1/2 teaspoon chili powder
The creation:
1. Chop a sweet potato into circles. Toss with olive oil, sea salt, and chili powder.
2. Place on grill over high heat. Either place directly on the grill, or lay down a piece of tinfoil. Cook for 10 minutes on one side, then flip with tongs and cook for another 10 minutes. **All grill temperatures will vary a bit, so be sure to watch them closely. Go off of coloring and density. If the potatoes are starting to get really burnt, or have softened, they are probably done.
