As expected, the almond dressing on this salad steals the show. Although, I must admit I may be biased because I love almonds and any sort of nut flavoring. However, I'm sure most would agree, the savory almond dressing adds the perfect amount of tang to the grilled tilapia and fresh mango.

A peeler makes eating and cutting mangos so much easier- you get much more of the mango meat with half the mess. 1. Combine the ingredients for the almond dressing in a food processor or blender until well mixed.
2. Combine ingredients for the fish marinade in small bowl. Then cover the filet in the marinade. Place in skillet over medium high heat. Once the fish starts sizzling, let it cook for two minutes on each side. Remove from heat once cooked all the way through and is slightly blackened on both sides.
3. Build your salad, starting with the spinach, then adding the tomatoes, avocado, mango, & cilantro. Place warm tilapia filet on top and drizzle with dressing.

- 1/2 teaspoon coconut aminos
- Pinch of salt
- One 4 oz tilapia filet

- 1/2 mango chopped
- 1/4 avocado chopped
- 1 tablespoon cilantro, whole leaves
- 1 roma tomato, chopped
For the dressing:
- 1 tablespoon almond butter
- 1 tablespoon coconut oil
- Juice of 1 medium lemon
- 2 tablespoons coconut aminos
- 1 clove of garlic, minced
