Me oh my were these turkey burgers delicious! After eating them, they left me with that perfect feeling of being satisfied and not needing to eat more, even though they were certainly good enough for seconds, or even thirds. This was my first time making turkey burgers since discovering my food sensitivities, so I was a little worried about making turkey burgers without eggs, since most recipes I had looked at required eggs. However, these burgers turned out just great without any eggs.
I tried to keep the ingredient list pretty simple. Often times, turkey burgers are packed with lots of different seasonings. However, the minimalist approach I took to seasoning the burgers brought out the natural flavors of the turkey. As far as toppings go, it's really hard to go wrong with guacamole and bacon, in my opinion.

The guacamole is probably some of the best I have ever made. And it was honestly pretty unexpected. I followed a similar recipe that I normally use, but for some reason it just turned out really good this time. Like it's going to be put in the family cook book good.
The sautéed vegetables also turned out really well. They were cooked to the point where they absorbed all of the oil and seasoning and started to brown just a little bit. When sautée-ing vegetables, I always aim to cook them this way, but it rarely happens like that. There is either too much oil or liquid, they don't absorb the flavor, are over cooked, or all three. But this time they turned out just right, really capturing a savory lime flavor.
These are perfect for a week night dinner, or as appetizers at a party. Please try this recipe out. Feel free to try different vegetable combinations or add your favorite seasonings. Make it your own!

The creation:
1. Prepare the guacamole by mashing the avocado so it is mostly smooth with a few chunkier pieces. Then mix in garlic, tomatoes, sea salt, red onion, cilantro and lime juice. Set aside for garnish.
2. Combine the turkey, honey, cilantro, sea salt, and lime juice to prepare the turkey burgers. Divide the meat into four mini burgers. Set aside.
3. On medium heat, cook the bacon in a frying pan for three minutes on each side. Watch the bacon closely depending on if you want crispier or juicier bacon. Mine turned out more crispy. Remove the bacon and set aside for garnish.
4. Using the same pan and the left over bacon grease, increase the heat to medium high, and place 4 mini turkey in the pan for cooking. Allow to cook 3-4 minutes on each side. Take a knife to the center and check to see if fully cooked through.
5. While the turkey burgers are cooking, combine the vegetables with olive oil, garlic, lime juice and salt. Sauté in wok pan on medium-high heat for 6-8 minutes, allowing all of the oil to be absorbed. Flip the vegetables every few minutes to ensure even cooking.
6. Garnish the turkey burgers with a spoonful of guacamole and a 1/2 a piece of bacon each.
