Healthy Paleo Pear & Goji "Cookie"
When I first made this pear "cookie" as an addition to my morning breakfast, I didn't think much of it. I just wanted to add a little more sustenance to my muffin, so I thought the fiber from the pear and the fats from the almond butter would be a good addition. However, When I uploaded this photo to instagram, I got many more likes than I was anticipating. And in the weeks since I have uploaded it, people have continued to like it and it has become one of my most popular photos.
This got me wondering why this picture was so popular. I have come to the conclusion that people may not have seen a pear paired with these ingredients. Apple "cookies" are very popular on pinterest- apple slices with almond butter, granola, raisins, and even chocolate chips. This pear cookie is kind of similar, just a healthier take.
Personally, I love the combination of flavors with this snack. The almond butter adds a creamy texture to the soft pear, and the goji berry adds a tang of sweetness. Not to mention this snack is super easy to make and very filling. So, if you are looking to switch up your snacking routine, try this pear cookie! You won't regret it.

Ingredients:
- 1 pear
- Handful of goji berries
- 1 to 2 tablespoons almond butter
The creation:
1. Slice the pear into open face chunks.
2. Cover open surface with almond butter. Sprinkle with goji berries. Enjoy.
